Breakfast: A+

Since blueberries are in adundance right now, I have been meaning to make some blueberry muffins.What I love about muffins is once you have a basic batter down, you can substitute ingredients and pretty much make any type of muffin you want. I wanted them to be low-fat, but still moist. I love FoodNetwork, and one of my fave chefs on there is Ellie Kreiger. I made her Apple Muffins last week, and I used her basic batter and turned it into blueberry muffins. Here’s how the batter looked:

Here’s the recipe:


    * Cooking spray
    * 3/4 cup packed brown sugar
    * 1 teaspoon ground cinnamon
    * 1 cup all-purpose flour
    * 1 cup whole-wheat flour
    * 1 teaspoon baking soda
    * 1/2 teaspoon salt
    * 1/4 cup unsalted butter (4 tablespoons)
    * 2 large eggs
    * 1 cup natural applesauce
    * 1 teaspoon vanilla extract
    * 3/4 cup 2% Milk
    * 1 pint Blueberries


Preheat oven to 400 degrees F. Coat a 12-capacity muffin pan with cooking spray and spray two cups in another muffin pan.

Melt the butter in the microwave or on the stove in a small saucepan.

In a medium bowl, whisk together the all-purpose and whole-wheat flour, baking soda and salt.

In a large bowl, whisk 3/4 cup sugar and melted butter until combined. Add the eggs, 1 at a time, whisking well after each addition. Whisk in the applesauce and vanilla.

Whisk in the flour mixture in 2 batches, alternating with the milk. Whisk just until combined. Gently stir in the blueberries.

Pour the batter into the prepared muffin pans . Tap the pan on the counter a few times to remove any air bubbles. Bake for 20 minutes or until a wooden pick inserted in center of 1 of the muffins comes out clean.

And here’s how I chose to eat mine. I enjoyed it with peach yogurt and Bear Naked Granola. It was good. šŸ˜‰
